We got so much corn last week that I’ve been putting it in everything. Today’s dinner was a corn soup made of corn, red pepper, avocado and spices, topped with some salad and leftover cashew cheeze.
We had so many tomatoes in our garden, so I threw them in the food processor with a little ground flax and chia seeds and poured little circles on the dehydrator sheet and let them go about eight hours, until they were done, but still pliable, not crunchy. They made great little “wraps” with some veggies and a macadamia “cheeze” sauce. Yum!
I got a case (minus about 7 that other members ordered) of organic corn in our buying club produce order today. I was tired and uninspired to deal with it, but I jumped into action and spent an hour or so shucking and removing the corn from the husks and bagging it up for various uses through the week. The process was actually rather relaxing… it’s hard to be stressed when you’re focused on a task! After my corn-inspired meditation session, everyone was getting hungry for some dinner. So, today’s inspiration was a corn and kale salad for me and hubby, and corn/potato soup for the kids. Good. 🙂
I like to make a batch of truffles or “yum balls” every now and then and leave them in the freezer for an after dinner treat. They’re so easy to make, and though they’re definitely not “health food,” they are a healthier treat, containing only real foods and no crazy chemicals or fillers, like many vegan packaged treats. Sometimes I leave out the maple syrup, and just use mesquite powder, but then I’m the only one that likes them. Wait, maybe that’s a good thing! Anyway, yum!
I headed down to Alexandria, Virginia today to check out the Animal Rights Conference with my entourage of kids and friends. It was great to see all the inspired people, dedicated to awareness and change. We spent a couple hours at the conference then headed to the Rockville Whole Foods Market for dinner. Good day!

- 3 tbsp cacao powder
- 1 tbsp carob powder
- 1 tbsp mesquite powder
- 1/2 tsp vanilla powder
- 2 tbsp almond butter
- 1 tbsp coconut butter
- pinch of sea salt
- water to consistency of a shake…
Gave it a whirl in the Vitamix…
